After stirring the pots at iconic spots like Salt’n’Pepper and Sams, he dropped anchor here to champion Latvia’s proudest plate: herring. But not just any herring — we’re talking hand-marinated masterpieces in every style you can imagine (and a few you can’t), paired with the Latvian classic, cottage cheese.
